Sweet and sour pork in Korean – Introducing Korean-style Chinese cuisine

Sweet and sour pork in Korean – I will be posting an introduction to Korean-style Chinese cuisine. In Korea, there is a genre called Chinese cuisine, which is a popular restaurant menu item, comparable to Korean-style fried chicken. Chinese cuisine in Korea has its roots in China, but has been adapted to suit Korean tastes over the decades. While some Chinese dishes have similar names to Korean Chinese food, none are truly identical. Think of it as a dish that has a Chinese name but is actually Korean. Tangsuyuk (sweet and sour pork) is one such dish.

Sweet and sour pork in Korean is a dish that can be easily made at home, consisting of deep-fried pork with a sweet and sour sauce.

Below is the Sweet and sour pork in Korean recipe.

1) Prepare 400-600g of pork loin or tenderloin. It's best to prepare it cut into pieces suitable for Sweet and sour pork in Korean. (The meat should be bite-sized, including the batter.)

2) Drain the blood (soak in cold water for 10 minutes) and season with salt and pepper.

3) Make the batter. Mix together 1-2 cups of potato starch (sweet potato starch) + 1/2 to 1 cup of cold water (2:1 ratio of starch to water), 1-2 egg whites, and a little cooking oil. Let it sit for a while. A thick mass will form at the bottom, while a clear liquid will form at the top. Discard the clear liquid at the top and use only the thick liquid at the bottom as the batter.

4) Coat the tangsuyuk (Sweet and sour pork in Korean) slices thoroughly with the batter and fry until crispy.

This is how you make tangsuyuk. The tangsuyuk meat is delicious on its own. Diabetics can eat just the tangsuyuk meat alone, as the sauce contains a lot of sugar.

Here's how to make the Sweet and sour pork in Korean sauce.

1) Bring water, sugar, vinegar, and soy sauce to a boil. Add 300-400 mL of water, 4-6 tablespoons of sugar, 3-4 tablespoons of vinegar, 1-2 tablespoons of soy sauce, and vegetables like apples and carrots. Alternatively, you can use the fruit from a can of cocktail fruit instead of the vegetables. This will create the Sweet and sour pork in Korean sauce.

Pour the sauce over the Sweet and sour pork in Korean meat, mix, and enjoy.

Because Sweet and sour pork in Korean is such a popular dish, there are variations. There are also variations like guo ba rou, which adds glutinous rice to the Sweet and sour pork in Korean batter; Szechuan tangsuyuk(Sweet and sour pork in Korean), which is deep-fried and spicy; and pizza tangsuyuk(Sweet and sour pork in Korean), which mixes tangsuyuk with pizza sauce. The tangsuyuk(Sweet and sour pork in Korean) recipe I mentioned here today is the original.

Fried food is delicious even if you fry the insoles of your shoes. In that sense, tangsuyuk(Sweet and sour pork in Korean), a dish made with deep-fried pork, is a delicacy that can't be bad. Some tangsuyuk(Sweet and sour pork in Korean) meat is sold frozen, so you can buy it and simply fry it. The sauce is also available at supermarkets in Korea, but I'm not sure if it's available overseas.

If you're looking for a culinary experience with Korean cuisine, I highly recommend visiting a Chinese restaurant. It's a soul food for many Koreans. When I was young, my dream was to be the son of a Chinese restaurant owner. That's about it.
