Japchae Deopbap: Korean Noodle Bowl Bliss
Japchae Deopbap: I will be posting an introduction to "Korean Noodle Bowl Bliss." Japchae is a special dish Koreans eat on special occasions like special occasions, holidays, or feasts. When japchae is mixed with rice, it becomes japchae Deopbab. The difference is that the japchae in japchae Deopbab is saltier than in regular japchae. This is necessary for the flavor to blend well with the rice.

Japchae is a stir-fried dish made with glass noodles, various vegetables, and meat, seasoned with salt and soy sauce. Vegetables such as onions, carrots, and wood ear mushrooms are sliced into long strips, lightly seasoned with salt, and then stir-fried in a pan. Glass noodles are made from sweet potato starch, and are blanched in boiling water before being cooked. Pork is also stir-fried in a pan. Finally, season with soy sauce, salt, and sesame oil, and mix everything together to create japchae. If you're making japchae deopbab, you can add more salt and soy sauce for a saltier taste. If you like it spicy, you can also stir-fry the japchae with gochujang and mix it with rice.
While japchae now often contains glass noodles, it used to be made entirely with vegetables. Simply cutting the vegetables into long strips, stir-frying them, and seasoning them made it a very healthy dish. However, at some point, glass noodles were added, and the amount gradually increased, leading to the current japchae. This is why expert chefs are said to have nagged their students not to make cheap japchae.
Koreans eat japchae on special occasions, but japchae deopbab is a daily dish. You can enjoy it when you want a simple rice bowl, or if you have japchae at home, you can make japchae deopbab without much thought.

To season japchae Deopbab, simply add salt, soy sauce, gochujang, oyster sauce, or any other seasoning of your choice to japchae and stir-fry.
